Tofu Tuesday
Yes I know, #TacoTuesday is pretty much sacred here in #SanDiego…however, I am a huge fan of Tofu , at least when it is properly prepared.
It is such a blank canvas of flavor for vegans and vegetarian and now that I added an Air Fryer to my kitchen gadget list it is just so easy to pepare.
I own a very very, very basic Air Fryer , I bought this during the holidays for a whooping $39 and it works great for us and we use it on a daily base.
To prepare tis next dish I also rely on my non traditional wok. I purchased it over a year ago and I fell in love with it, I use it to stir fry, oil fry, sauté . It is super easy to use, the perfect size for o many dishes and it is crazy easy to clean. RACHEL RAY WOK
If you don’t own a wok any non stick pan would work, but if you are looking to invest in a wok I found this to be the most versatile I ever owned and no seasoning needed since it is not cast iron.
SWEET AND SOUR VEGAN TOFU WITH MANGO:
INGREDIENTS:
1 pkg 14 oz Simple Truth Organic Firm Tofu ( Pressed and cubed)
2 TBSP Corn Starch
Cooking Spray
1 mango
4 Green ONions
1 Orange Bell Pepper
1 Cup Broccoli ( steamed)
3 Tbsp Rice Vinegar
2.5 TBSP Coconut Sugar
1 TBSP Low Sodium Soy Sauce
1/3 Cup Of water
1 Minced garlic Clove
1 Tsp Grated fresh ginger
1.5 TBSP No Sugar Added Ketchup
Chili Flakes ( Optional)
Oil for cooking
Method:
Press and pat dry the tofu block, cube it and add it to a large ziplock bag. Add the two tablespoons on corn starch and give it a generous spray of Organic Canola Oil cooking spray and mix it well.
Preheat the air fryer for 5 minutes to 400 degrees.
Once ready open the basket coat it with cooking spray and cook the coated tofu for 15 minutes at 400.
Prepare your sauce:
Add the water, soy sauce, sugar, ginger, garlic, rice vinegar and ketchup in a small bowl and set aside.
Wash and dice your veggies. Dice your mango and set it aside.
In the meantime heat your wok and add a little oil to it. Add your diced pepper and the white part of the onions and sauté for a few minutes until the peppers just begin to soften. Add your steamed broccoli.
Pour the sweet and sour sauce over the peppers and bring to a simmer. Add the Air Fryer tofu once ready and give it a good stir. Add in your diced mango and add a few chili flakes if you are adding a little heat.
Cook everything together until the sauce starts to thicken and tofu is nicely coated all over.
You can serve this as a standalone dish or over Thai rice noodles or over a bed of steamed rice.
