We made these....so could you

We made these....so could you

These turned out so amazing and honestly pretty easy to make. We noticed also they hold up so much better than store bought kaiser rolls and don’t get as soggy…even at the bottom of my kids teriyaki burger or my island tofu patty.

INGREDIENTS:

  • 1 cup plus 1 tablespoon water (warm, about 105 F)

  • 2 1/4 teaspoons active dry yeast

  • 4 cups bread flour  (divided)

  • 2 tablespoons dry milk powder

  • 2 tablespoons sugar

  • 1 1/2 teaspoons salt

  • 3 tablespoons melted butter

  • 1 large beaten egg

  • Oil to grease the bowl

    Toppings: ( we did sesame seeds and poppy seeds)

  • 1 egg white

  • 1 teaspoon water

  • Optional: 1/4 cup sesame seeds (or poppy seeds)

  • Optional: 2 tablespoons butter (melted)

    Recipe Yields 10 Rolls

DIRECTIONS:

1- Preheat the oven to 375 - Combine the water and yeast in the bowl of a stand mixer; let stand for 10 minutes.

2- Add the 2 cups of the flour and mix until well combined.

3 - attach the dough hook and add the rest of the flour, the milk powder, the salt, the sugar and 3 tbsp of butter and the egg,

4- Mix on medium speed for about 6 minutes.

Adjust as needed, If too soft add more flour, if too dense , add more water, about 1/2 to 1 teaspoon at a time, or until the dough is soft yet pulls away from the sides of the bowl.

5- Form the dough into a ball and place it into an oiled bowl turning it once to coat all sides with the oil. Cover it with plastic wrap and let rise in a warm place for about 1 hour, or until doubled in bulk.

6- Divide the dough into 10 pieces.

7 - On a lightly floured surface, roll a piece of dough into a rope about 15 inches long. Take both ends and make a simple and loose knot with the rope, leaving a bit of space in the middle and two long tails of dough. Take each end of the wrap it loosely around the knot pinching the ends jointly at the bottom. Repeat with all the pieces and lined them onto a parchment paper sheet . Cover them with plastic wrap and allow them to sit and rise for one hour.

8 - make the egg wash and brush it over the rolls and sprinkle the sesame seeds or poppy seeds.

9 - Bake at 375 for 15 to 18 minutes :o)

FOR THE CRISPY TOFU:

1- PreHeat the over to 400

2- Open and pat dry a container of Wildwood Sprouted Super Firm Tofu and divide it lengthwise into 3 pieces ( If you are turning the rolls into smaller ones, you can divide the tofu into 6 pieces to for slider size patties)

3- Place the tofu patties in a ziplock back with 1 tbsp of corn starch, and coat with cooking spray.

4 - Bake in the oven for 10 minutes on each side, then coat the tofu in Teriyaki Sauce and bake on each sides for an additional 5 minutes to caramelize the sauce.

Serve with vegan mayo, a grilled pineapple slice and lettuce over the homemade kaiser roll,
