Honey Glazed Garnet Yams
I love garnet yams. They are so filling and so versatile they make it onto my grocery list, well every week.
Seriously the only downfall to yams is having to peel them, and usually I make my hubby or my kIds do that ;)
If you are looking for a super easy recipe that is full of flavor this is it. You can serve these sweet and spicy garnet yams over rice or simply eat them by themselves as I did.
Ingredients:
2 large garnet yams
1 tsp smoked paprika
1 tsp ground cinnamon
1 tsp ground ginger
1 lime juiced
1 tsp cayenne pepper ( 1/2 tsp if you like a little less heat)
2 TBSP agave
2 tsp olive oil
1/2 tsp ground garlic
salt and pepper to taste
Directions:
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Peel and cube the garnet yams and place them in a large mixing bowl.
Add the olive oil, the smoked paprika, the cayenne pepper, garlic powder , the ground ginger, the lime juice and the agave. Add salt and pepper to your liking.
Mix well to coat evenly.
Pour the prepared yams onto the lined baking sheet and roast for 45 minutes mixing halfway through.
Remove from the oven and garnish with fresh cilantro.
Enjoy as is or over a bed of steamed rice.
